This session will explore how enzymes drive chemical changes in fruits and vegetables after harvest and how these reactions contribute to food spoilage and food waste.  We will connect core enzyme concepts (specificity, reaction rates, and environmental effects) to real-world food systems.

The meeting will involve a 45 minute interactive talk and discussion, followed by a 1 hour 15 minute hands-on lab activity and facilities tour.
